For 4 people

4 filets of Nile-perch
5 cm ginger, grated
4 tablespoon olive oil, very good quality
Sea salt, pepper
1 lemon cut in slices

Preheat oven to 230C°. Cut 4 rectangular sheets (30x40cm) of aluminum foil. Baste both sides of the fish filets with olive oil, salt and pepper, and place each one in the middle of a sheet of aluminum. Add a pinch of grated ginger and a slice of lemon. Close the foil well (the join should be on the upper side); make sure there is no way the steam could escape. Place your papillotes in the hot oven and cook them for about 20 minutes.

Once ready, place the papillote directly on the plate and let it open by the guests…
